The 2022 Olive Hill “Manuscript” Shiraz was made from grapes that were carefully hand-picked into small crates. Each small batch was fermented separately, allowing the winemaking team to apply different techniques to enhance complexity. These methods included cold soaking, whole bunch fermentation, and wild fermentation.
The wine was then matured in a combination of French and American oak barrels. The barrels were gently stirred several times to help the wine clarify naturally, making filtration unnecessary before bottling. After 24 months of barrel ageing, the wine was bottled to allow the oak integration to reach optimal balance and complexity.

2022 Manuscript Olive Hill Shiraz is a classic Barossa Shiraz with an intense fruit‑driven style, presenting a deep crimson colour. The palate is medium to full‑bodied, showing ripe berry, blood plum and raspberry characters. Subtle layers of spice and toasted oak beautifully balance the vibrant fruit flavours. The mid‑palate is finely textured with silky tannins, enhancing the wine’s vitality. It finishes with lingering notes of rich berries and cedar oak, leaving a long and harmonious aftertaste.
